Sweet clover essence, our local vanilla
It was the chance of picking that led us to become interested in sweet clover. Its exquisite sweet and vanilla scent followed us during certain harvests in the fields.
As we read, we discovered that the plant contains a molecule similar to vanillin, which is found in vanilla. The idea of creating a vanilla essence specific to our region was born.
It took three years of research and development to develop sweet clover essence. Harvested in July, the tiny flowers are patiently sorted with tweezers before proceeding to create the essence.
The result is an exquisite and unique product that is both contemporary and firmly rooted in our land, a creation from scratch based on what nature offers in all its delicacy and splendor, the perfect balance between a purely wild product and creativity, without artifice.
Use in cooking
Sweet clover essence is reminiscent of vanilla, but it offers much more complex aromas that reveal themselves differently depending on the other ingredients it's paired with. Use it anywhere you would use vanilla!
