Delicate and slightly crunchy, it is reminiscent of the heart of palm but its finesse is unrivaled! It is an exceptional artisanal product whose harvest is arduous, which in our opinion is one of the most unique and historically rich dishes that the forest has to offer!

A difficult harvest!
Cattails are often picked in waist-deep water. The mud makes it difficult to move easily, mosquitoes make you lose your patience, and the experience is very physically demanding.
Yet, as intense as it may be, picking cattails is a great joy as we work in one of the richest natural environments there is: the swamps. Turtles, muskrats, birds; we rub shoulders with extraordinary flora and fauna!
The environments where we harvest are carefully chosen for their cleanliness. Cattail is a filtering plant that accumulates pollutants in the water. We therefore always ensure that our harvest is carried out in contaminant-free environments, upstream of waterways.
A fragile environment to be preserved
If the heart is only a tiny part of the cattail and the rest of the plant is left in place, picking it does not in any way endanger the presence of the plant, quite the contrary.
As soon as the cattail is harvested, the rhizome signals for new shoots to appear. Harvesting therefore allows for healthy regeneration of the plant and its environment. We have been harvesting in one particular marsh for over 20 years, and it gets a little more beautiful every year!
Cooking Cattail Hearts
Cattail hearts are tender and slightly crunchy; unusual and refined. The work required to harvest them only makes them more precious, while on the plate, they are proud ambassadors of a Nordic cuisine where the value of ingredients is recognized.
