Capers reinvented!
These wild "capers" are made from elderberries picked while they are green and hard, before they reach their full ripeness. They are then salted, brined, and left to macerate for several weeks before reaching their full flavor potential. The result is a unique, refined, and decidedly different condiment.
It was the Noma restaurant, which pioneered the development of Nordic cuisine, that popularized this method of preparing the berry. We offer it to you here, made our way after numerous kitchen experiments.
