A most desirable mushroom
Black trumpets can be quite difficult to find as their dark colour blends so well with the forest floor. They grow in clumps, quite often in red oak and white pine forests. The picker who finds a few should get down on hands and knees : it is probable that there are more black trumpets than there seemed to be at first
Using Black Trumpets
This is the perfect mushroom for creamy sauces, for fried onions and goat cheese omelettes. It is great in soups and with grilled vegetables.
Be sure to clean them before using them as their conical shape acts as a funnel for forest debris.
Rehydrate your mushrooms in the liquid of your choice (water, wine, stock, milk) until they are swollen and pliable (about 10 minutes) and use them in your favorite recipe. Keep any excess liquid for other recipes. If your recipe already has liquid, toss the mushrooms in as they are; they will rehydrate during the cooking. Use them as is, chopped in chunks or ground into a powder in your blender.
